Baked Creamy Chicken Taquitos

I made these for the work folks last week and they were a hit. They are easy and flavorful, perfect for any Mexican craving.


Ingredients:
3 oz cream cheese, softened
1/4 cup green or red salsa (I used a fresh red salsa)
1 Tbs fresh lime juice (Juice from half a lime)
1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp onion powder
2 cloves garlic, minced
2 Tbs chopped cilantro
2 Tbs sliced green onions
2 cups shredded cooked chicken
1 1/2 cups shredded Mexican flavored cheese
Small flour tortillas (I think mine made about 14)
Salt to taste

Preheat oven to 425 F. Line a baking sheet with foil. In a large bowl, mix the cream cheese, salsa, lime juice, cumin, chili powder, onion power, and garlic. Once combined, stir in the cilantro and green onions. Add the chicken and cheese; mix thoroughly. Heat tortillas in the microwave for a few seconds so they are soft and easy to roll. Spoon 2-3 Tbs of the filling onto tortilla. Roll as tightly as possible. Place the rolled tortillas seam side down on the baking sheet. Make sure they are not touching. Spray the tops lightly with cooking spray. Bake for 20 minutes or until crisp and golden. Serve with sour cream, guacamole, and salsa.
