Sugar Donut Muffins

This recipe caught my eye when I was browsing some recipe blogs the other day. Once again, I have a weakness for cute little baked goods. I made these today for an after school treat for my brothers. They, liking anything sweet, thought they were delicious. Gannon suggested rolling the muffins in a sugar and cinnamon mixture instead of just sugar. Try it out!

Ingredients:
1/2 cup sugar
1/4 cup brown sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/8 tsp ground nutmeg
1/8 tsp cinnamon
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
2 tbsp butter, melted
1/2 cup sugar, for rolling

Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil. In a large bowl, beat together the sugar and egg until light in color. In a small bowl, whisk together the flour, baking powder, salt, nutmeg and cinnamon. Pour the flour mixture into egg mixture and stir to combine. Add in vegetable oil, milk and vanilla extract. Divide batter evenly into 24 mini muffin cups. Bake for 15 minutes, until a tester inserted into the center comes out clean. While muffins are baking, melt butter and pour remaining sugar into a small bowl. Carefully remove from the pan. Dip the tops in butter and roll each muffin in the sugar.
