This pasta salad is light and healthy and perfect for summer. You can make it easier by using premade Greek salad dressing, or you can add different vegetables like peppers, onions, or olives. It would also be great served with fresh spinach.
Ingredients:
6 chicken tenderloins
1 box of orzo pasta (1 lb)
1 medium sized cucumber
1 tomato
4 slices of bacon (I used precooked)
1 container feta cheese
1/4-1/2 cup Greek salad dressing (recipe will follow)
Seasoning salt to taste
Cook orzo according to package directions. Drain when cooked. In the meantime, marinade chicken breasts in Greek dressing. Heat skillet to medium heat on stovetop and cook tenderloins until done. I cooked them on medium heat in the marinade until they were done, and then turned up the to medium/high and seared until the tenderloins with browned on each side. Chop chicken and set aside. Chop your vegetables into bite-sized pieces. Slice bacon into small bits. Combine orzo, chicken, vegetables, feta cheese, and bacon. Pour in salad dressing. Mix to combine. Season with seasoning salt to taste. Chill and serve.
Greek Salad Dressing:
1/2 cup olive oil
1/2 cup red wine vinager
1 tsp oregano
1 tsp basil
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1 tsp pepper
1/2-1 tsp dijon mustard
Whisk all ingredients together until well combined.
