With a wedding coming up in less than six months, I have been trying to be healthier. Well, some of the time. I have been interested in making some healthy oatmeal cookies. We had a ton of leftover honey from Caroline's wedding so it was the perfect time to try. These cookies turned out a lot better than I thought they would. Of course they aren't identical to their buttery counterparts, but they have a nice flavor and texture and would be perfect for a healthier sweet snack. The original recipe came from Whole Grain Gourmet, but I adapted it a bit by substituting the applesauce for the oil. Hope you like them!
Ingredients:
1 cup whole wheat flour
1 1/2 cups Old Fashioned oats
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 Tbs cinnamon
Preheat oven to 335 degrees. Combine dry ingredients. Then mix in the following ingredients:
1/2 cup unsweetened applesauce
1/2 cup honey
1 egg
1 tsp vanilla
1 Tbs butter (I just felt like these needed just a little dab of unhealthy. Omit the butter if you would like.)
Mix well. Place tablespoon sized spoonfuls onto a foil lined baking sheet. Bake for 10-15 minutes.
