Cheesy Chicken, Bacon, & Broccoli Skillet

Guys. This is yum. What's better than chicken, bacon, and cheese? Throwing in some rotel tomatoes, rice, and broccoli. This skillet meal will knock your socks off. Substitute brown rice and turkey bacon to make this a little healthier if you want. Trust me, this recipe will be a regular on your menu.

Ingredients:
1 cup of rice, uncooked

1 small onion, diced
3 cloves garlic, minced
1 Tbs olive oil
2-4 cups broccoli florets

2 chicken breasts, cooked (I sprinkled mine with salt and pepper and grilled them)
8 slices of bacon, cooked
1 can rotel tomatoes, drained

2 Tbs butter
2 Tbs flour
1 cup chicken broth
1 cup sharp cheddar cheese, grated

Cook the rice and set aside. In a large skillet, saute onion and broccoli in the olive oil until tender (about 10 minutes). Add garlic and cook 30 seconds. Top with chicken, bacon, rice, and rotel tomatoes. Reduce the heat to low to keep warm.

In medium sized skillet, melt butter. Once melted, stir in flour. When combined, add chicken broth. Whisk constantly until combined. Increase heat to high, stir constantly until mixture is thickened. Remove from heat and stir in cheese. Pour sauce on top of other ingredients and stir to combine. Enjoy!
