Chicken Caesar Salad Pizza

Wow! This pizza is a flavor explosion in your mouth! Even my husband who is not a huge pesto fan loved this pizza. First you take a pizza crust and you grill it, until it is nice and crispy. Top it with fresh pesto, yummy chicken and cheeses, bake it for a few minutes, and top it with your favorite caesar salad. Yum! If you don't have a grill, you can do all of it in the oven. Enjoy!


Ingredients:
1 pizza crust (I have made them before, but this time I bought it at Publix)
1 chicken breast, grilled and sliced *
1 Tbs pesto
1/2-1 cup shredded Monterey Jack cheese
1/4 cup feta cheese
1 Caesar salad kit

* Chicken marinade
1 Tbs olive oil
1/4 tsp rosemary
1/4 tsp salt
1/4 tsp pepper
1 tsp lemon juice
1/8 tsp paprika
1/4 tsp Penzey's "Mural of Flavor"

Let the pizza crust sit out of the fridge for about an hour before you want to grill it. The dough will be more flexible when it is room temperature and won't shrink back every time you try to stretch it out! During this time I grilled my chicken. Brush olive oil on one side of the crust. You can do one big pizza or split the dough into individual pizzas. Grill on each side for 3-5 minutes with the lid off. Watch carefully so that you don't burn it! Preheat the oven to 400 degrees. I finished my pizza in the oven, but  you are welcome to do it all on the grill! Put the crust on a pan. Top with pesto, chicken, and then cheeses. Bake for 10-15 minutes or until cheese is bubbly and crust is browned. Meanwhile, mix your caesar dressing with the lettuce. When the pizza is out of the oven, top with salad and slice!

Other ideas:
You could always add bacon to your pizza
Sliced tomatoes can be added to the salad mixture
