I am pretty excited about this week. I am cooking almost all new recipes and they look delicious.
Monday: Grilled BBQ chicken, okra, green beans, and Jalapeno Cornbread
I am still in love with grilling. Obviously. Add in some veggies and a spicy cornbread and the meal is made!
Tuesday: Coconut Flank Steak with rice
I love anything with a Thai flair. I am actually going to substitute the broccoli with green beans and I am serving this over rice to make it a meal.
Wednesday: Pollo Rosa Maria with mashed potatoes and a salad
My favorite restaurant meal is probably Pollo Rosa Maria from Carrabba's. I am hoping that this recipe with taste similar. You can get the number of slices you need of prosciutto and fontina cheese at Publix's deli counter. It only cost me $2.25 total for two slices of each.
Thursday: Rosemary Ranch Chicken Kabobs with corn and yellow rice
Love to grill. Enough said. Plus I got four ears of corn for $0.99 at Aldi!
Friday: Eggplant Mozzarella Melts
I love eggplant parmesan. This meal makes that dish into an open faced sandwich. If you've never tried eggplant, you should try this.
Saturday: Cajun Chicken and Sausage Jambalaya
Ben loves cajun food, so this recipe is for him. I got turkey sausage at Aldi for $2.29.
This recipe was something I had never thought of. I am using bacon because I have some leftover from last week. I am also substituting the cream for half and half.
