Does anyone else love P.F. Changs lettuce wraps? Me too! I've been craving them recently, so I went on pinterest and began my search. My goal was to find something with only a few ingredients I had to buy, plus it needed to be easy to make and delicious to eat! I found this recipe from Cooking Light and it fit the bill. I adapted it a bit by leaving out the sherry and adding rice. It was so yummy! The sauce is delicious and the addition of the rice makes it a little heartier. So next time, skip the restaurant and make them yourself!
Ingredients:
1 chicken breast, cooked and chopped into small pieces
2 Tbs low sodium soy sauce
1 Tbs Hoisin sauce (found in the ethnic food aisle of your grocery store)
1 Tbs sesame oil
2 garlic cloves, minced
1 Tbs ginger, minced
1/2 cup shredded carrots
1 cup cooked rice
1/4 cup green onions
1/2-1 tsp sriracha sauce
1/4 cup chopped cashews (optional)
1 head Bibb lettuce
In a large skillet on medium heat saute minced garlic and ginger with a little olive oil for 30 seconds. Add soy sauce, Hoisin sauce, and sesame oil. Cook for 5 minutes. Add carrots, rice, chicken, sriracha sauce, and cashews. Top with green onions and serve on lettuce!
Makes 4 servings: 215 calories per serving
