Cowboy Caviar

Let's face it: most of my recipes = not very healthy. I love the combination of chocolate, butter, and cream cheese too much. Good news! This appetizer is guilt free and delicious. I got it from one of my co-workers, the amazing Melissa Mullen. You can even take this recipe and tweak it to fit your own tastes by changing up the types of beans or using less/more onion. I hope you enjoy!

Ingredients:
2 cans (15 oz) black beans, rinsed
1 (17 oz) can whole kernel corn, drained
2 large tomatoes, chopped
1/2 medium red onion, chopped finely
1/4 cup chopped fresh cilantro

Dressing:
1 Tbs red wine vinegar
3-4 Tbs lime juice (I just used the juice from 1 whole lime)
2 Tbs olive oil
1 tsp salt
1/2 tsp pepper

Combine all the top ingredients in a bowl. Combine the dressing ingredients and add dressing to the bowl. Mix well, cover, and chill. Serve with chips.

** This dip tastes better the longer it chills
