Southern Living's Light Banana Pudding

A lot of times we have a few overripe bananas just hanging out in our kitchen. If you are anything like me, those bananas will never get eaten. I only eat bananas by themselves when they are green. Weird, I know. So I'm always finding ways to use them. To take a break from my usual banana bread, I've decided to make banana pudding today. This banana pudding is delicious and you won't be able to tell that it's made with fat free condensed milk and low fat milk!

Ingredients:
1/3 cup flour
Dash of salt
2 1/2 cups low fat milk
1 can fat free sweetened condensed milk
2 egg yolks, lightly beaten
2 tsp vanilla extract
3 cups sliced ripe bananas
Vanilla wafers
Cool whip (optional)

Combine flour and salt in a medium saucepan. Gradually stir in milk, condensed milk, and yolks, and cook over medium heat, stirring constantly, 8-10 minutes or until thickened. Remove from heat, stir in vanilla. Layer bananas, pudding, and vanilla wafers. Top with cool whip and more vanilla wafers. Chill and enjoy!
