These cookies are fantastic. Crispy on the edges, chewy in the middle. Oatmeal and butterscotch are perfect together. This recipe was adapted from a Hershey Kitchens recipe. I'm taking these yummy little things to the beach!
Ingredients:
3/4 cup (1 1/2 sticks) butter, softened
3/4 cup white sugar
3/4 cup packed light brown sugar
2 eggs
1 tsp vanilla
1 1/4 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3 cups old-fashioned oats
2 cups butterscotch chips
Heat oven to 350 degrees. Beat butter and sugars in a large bowl until well blended. Add eggs and vanilla; beat well. Combine flour, baking soda, cinnamon, and salt; gradually mix in to the butter mixture. Beat until well blended. Stir in oats and butterscotch chips. Drop tablespoon (or larger) sized pieces of dough onto an greased foil covered cookie sheet. Bake 8-10 minutes or until edges are golden brown.
