This recipe is incredibly simple. And amazingly delicious. I'm not sure why I hadn't thought of this before. Thanks to What's Gaby Cooking, now I have. It can be made as an appetizer, snack, or paired with a caesar salad for dinner. She made her own pizza dough, which is great, but seems like way too much work when Publix sells it for $1.99. I will post her dough recipe though in case you want a challenge.
Dough:
2 1/4 tsp active dry yeast
1 cup of warm water
1 tsp sugar
2 cups of bread flour
1 cup all purpose flour
2 Tbs salt
To make the dough:
In a medium bowl, combine the bread flour, all purpose flour and salt. Set aside. Combine the active yeast and water in a mixing bowl fitted with a dough hook. Let it sit for a few minutes to make sure your yeast is working. Add the sugar and mix for a quick second. Add the flour mixture in batches, scraping down the sides of the bowl. Let the dough hook work its magic for 5-6 minutes until the dough has come together into a large mass. Remove the dough to an oiled bowl and let rise for 60 minutes.
Once you have your dough mix these ingredients together:
1 cup of parmesan cheese, grated
1 Tbs Italian seasoning (you are welcome to substitute fresh basil, parsley, etc for the dried Italian seasoning. I will once we have fresh herbs)
2 cloves garlic, minced
Salt and pepper to taste
Melt 1/4-1/2 cup of butter. Roll dough into balls the size of golf balls. Roll into cheese mixture. Then put your dough balls into whatever kind of pan you want. A bundt pan would make a large one, or you could use muffin pans for smaller servings. Layer the dough balls like in the picture. Bake in a 350 degree oven for 15-30 minutes depending on which kind of pan you use. Dip in marinara and enjoy!
