This is my last post for the day. I shouldn't have the house to myself. It leads to excessive cooking. And don't get mad because I posted a dessert. It's worth it. Gooey brownie nestled beneath a crisp crust. Paired with ice cream equals perfection. Rich and decadent. Adapted from Ina Garten.
Ingredients:
2 sticks butter, melted and cooled
4 eggs
2 cups sugar
3/4 cup cocoa
1 cup flour
1 1/2 tsp vanilla
Vanilla ice cream
Preheat oven to 325 degrees. Grease a 8X12 baking dish. Beat the eggs and sugar together on medium/high speed for 5-10 minutes until light yellow and thick. Add the cocoa, flour, and vanilla. Mix only until combined. Pour in cooled butter and mix until combined. Pour the brownie mixture into the greased dish. Place in a large baking dish. Add enough hot tap water to the pan to come halfway up the side of the dish. Bake for 45 minutes to an hour or until a toothpick inserted 2 inches from the side comes out 3/4 clean. Serve with ice cream.
