The other day, I had bought some boneless, skinless chicken thighs at the grocery store. The only reason I never cook with anything besides the breast is because I HATE the bones and skin. I was craving a white BBQ sauce like I had tasted at a few restaurants in the area. I found this recipe from Fake Ginger and it turned out pretty well.
Ingredients (To serve 4):

4 cups of cooked chicken, shredded (Here is where I used chicken thighs. You could also use breasts to make it easier. I seasoned my chicken thighs in a gallon sized bag with about 1/4 cup olive oil and enough creole seasoning to coat the thighs. I used the creole seasoning because it gave the meat a little spice. Then I baked them for about 45 minutes on 350 degrees. Once they were cool I shredded the meat into pieces.)
For the sauce:
3/4 cup mayonnaise
2 Tbs white vinegar
1 tsp lemon juice
3/4 tsp black pepper
Morton's Season-All to taste
Whisk together sauce ingredients. Add the Season-All to taste. Chill before serving to let the flavors meld. You can then heat up the sauce when serving if you want to.
