What's not to like about bacon and chicken? Nothing. I found this recipe at the Kayotic Kitchen. Because I have a hard time just serving bacon-wrapped chicken in a meal, I sliced my chicken once it was cooked and served it over a salad with cheddar cheese and ranch dressing. They were delicious!
Ingredients:
8 chicken tenderloins, sliced lengthwise in half
16 slices of bacon ( I used turkey bacon which is a million times better for you.)
3 Tbs honey
2 tsp ground mustard ( I used a spicy brown mustard)
1 tsp lemon juice
Salt and pepper
Wrap each piece of sliced chicken in a slice of bacon. Place on a foil lined baking sheet. Combine honey, mustard, and lemon juice. Brush each piece of chicken with the marinade. Bake at 425 degrees for 10-15 minutes. Flip the chicken over, brush with remaining marinade and cook for another 10-15 (or until chicken is done). Season with salt and pepper.
