Baked Shrimp Po-boy

Lately I have been cooking with a lot of shirmp. They cook quickly and there are so many different ways to season them. This sandwich is a healthy take on the fried shrimp po-boy. I baked the shrimp instead of frying them, and I used a reduced fat mayo for the sauce. I don't usually like mayo and I thought this sauce was a hit!


Ingredients:
2 hoagies (I used Publix bakery kind)
1/2 lb shrimp, pealed
1/2 tsp cajun seasoning (I used this recipe); you can also buy it pre-made, but be careful because it often has a lot of salt
1/4 tsp parsley
1 clove garlic
2 tsp olive oil
Lettuce/tomatoes for sandwich

Po-boy Sauce
2 tbs reduced fat mayo (I used mayo with olive oil)
1 tsp sweet relish
1/2-1 tsp horseradish
1/2 tsp cajun seasoning
Salt and pepper to taste

Place the shrimp in a large bowl. Mix with olive oil, spices, and garlic. Preheat your oven to 350 degrees. Cover a baking sheet with foil and spread shrimp over pan. Cook for 10-15 min or until shrimp are opaque. Warm rolls. (I usually throw them in the oven for the last 5 min of when the shrimp are cooking. Slice and add lettuce, shrimp, and po-boy sauce.

For the po-boy sauce:
Mix all ingredients together. Best if made at least 4 hours before and chilled.
