Cajun Pulled Pork Sandwiches

If  you want something different than the average sandwich, man, do I have a treat for you! Yummy bread topped with an avocado spread, juicy pork, and a pepper relish. Delish. This sandwich is even better when your power goes out right around dinner time, and you've already had this meal cooking in the crock pot all day. I adapted this recipe from Half Baked Harvest.


Ingredients:
1 pork tenderloin
4 hoagie rolls, ciabatta bread, etc
Cheddar cheese (optional)

Sauce:
1 1/2 cups beer (I used Bud Light Lime)
1/2 cup apple cider vinegar
1/3 cup ketchup
1/4 cup brown mustard
2 Tbs brown sugar

Rub:
2 Tbs creole seasoning (recipe below)
1 Tbs brown sugar
1 tsp salt

Relish:
1 red pepper, sliced
1 serrano pepper, sliced
1/2 avocado, diced
Salt and Pepper to taste

Avocado Spread
1/2 avocado, mushed (yes, that's the real word)
1/2 tsp lemon juice
1 Tbs mustard (for this I ran out of my brown mustard so I used a deli mustard from Publix)

In the crock pot, whisk together the sauce ingredients. Combine the rub ingredients and rub into tenderloin. Pour extra seasoning into the sauce. Sear outside of pork in pan or on grill. Place in crock pot and cook on low for 8 hours. Shred with a fork when tender.

Combine the ingredients for the relish and place in refrigerator.

Once the meat is done, place extra sauce in saucepan and simmer for 10 minutes until sauce is thick.

Before serving mix avocado, lemon juice and mustard. Spread on bread. Top with shredded pork, cheese, sauce, and relish. Enjoy!

Creole Seasoning 
1/3 cup paprika
1/4 cup garlic powder
1/4 cup onion powder
1/3 cup black pepper
2 Tbs cayenne pepper
2 Tbs thyme
2 Tbs basil
1 Tbs oregano
