Mini Greek Grilled Chicken Pitas

I love Greek food, and I could eat it everyday. And with this easy, peasy recipe I could if I wanted to. This recipe uses pre-made pita bread. You are welcome to make your own (I have before), but these mini pitas by Joseph's are yummy and healthy! The sauce could be made the day before, so all you'd have to do the day of is grill your chicken. Yum!

Ingredients:

2 chicken breasts
1/2 tsp Greek seasoning
1 Tbs olive oil
Salt and pepper
1 package Joseph's mini pita breads (found at Publix in the bakery section)
Lettuce
Tomato
Cucumber
Feta cheese
Taziki sauce (recipe below)

Season your chicken breasts with Greek seasoning, salt, and pepper. Drizzle with olive oil and rub seasoning into meat. Let marinate at least 1 hour. Grill chicken once meat has marinated for at least an hour and come to room temperature. At this point I like to wrap my pitas in foil and place in an oven set to 250 degrees while I am cooking the chicken. Slice tomatoes, cucumbers, and lettuce. Once chicken is done, slice and place on pita bread. Top with lettuce, tomato, cucumber, feta cheese, and taziki sauce. Enjoy!

Serves 4 people

Taziki Sauce
1 small container plain Greek yogurt (I use Oikos)
1 clove garlic, minced (or 1/2 tsp garlic powder)
1/2 tsp Greek seasoning
1/2 tsp salt
1/4 tsp crushed red pepper
1 Tbs fresh basil, sliced
1 tsp fresh mint, sliced (optional)

Combine all ingredients. Refrigerate.
