Sweet Yeast Rolls

There are not many things I love more than bread. Sweet, yeasty, warm bread. I could eat it all day every day. I've made this recipe quite a few times, and it is very simple and hard to mess up. I have substituted some of the flour for whole wheat flour and that was also delicious. This is very, very simple if you have a stand mixture. If not it will just take a little more muscle! Bread is not as hard as you think it is to make from scratch! Try it!

Ingredients:
1 packet (or 2 1/4 tsp) active dry yeast
1 cup hot water (turn your tap water as warm as it will go)
1/3 cup sugar
1/2 cup oil
1 egg
1 tsp salt
4 cups flour

In a large bowl (or your mixing bowl), pour in yeast and sugar. Pour hot water on top of the yeast. Let rest for 5 minutes. You will at this point see foamy, brown bubbles that have risen to the top. If you don't, start over. The yeast may be bad, or your water may be too hot or too cold. Attach your paddle attachment to your mixer and add oil, egg, and salt to your yeast. Mix well. Add in flour slowly. Once all of the ingredients are combined, switch to your dough hook on your mixture. If you don't have a stand mixture at this point, you will need to knead the dough by hand. Knead the dough for 5 minutes on a medium-high speed. Cover your mixing bowl with a dishtowel and place bowl in a slightly warmed oven for 2 hours (I turn my oven on warm, and then turn it off when I place the dough inside). Pull your bowl out of the oven. Coat your hands with flour. If the dough is very sticky, you may need to add a little flour to the mixture. Grease two 8-inch cake pans. Pull off small pieces of the dough, roll into a small 1-2 inch ball, and place in your cake pans. I put about 9 balls in each pan. You can make smaller or larger rolls if you wish. Place back in oven and let rise for an additional hour. Spread the tops with a little melted better and bake at 400 degrees for 10-15 minutes. Enjoy!
