Sandwiches!

Sandwiches can be an easy, cheap meal that can be way more interesting than the typical ham and cheese. These sandwiches are filling and delicious. When I make sandwiches for dinner, I usually do two different kinds in one week so that we don't waste the buns or rolls. It also saves money! Here are a few of my favorites:

Santa Fe Chicken Sandwich

I had this sandwich a couple of days ago from a local deli. I absolutely love guacamole these days. Can't get enough of it. Regardless, it was delicious so I decided to make my own variation.


Ingredients:
2 onion hamburger rolls (Publix bakery)
1 large chicken breast
Marinade (see below)
2 Tbs guacamole
2 slices of cheese (I used swiss)
4 slices bacon, cooked
Tomato, lettuce

Marinade:
1 Tbs olive oil
1/2 tsp garlic powder
1/4 tsp paprika
1 Tbs lime juice
1/2 tsp crushed red pepper
1 tsp brown sugar
1/2 tsp salt

Combine marinade ingredients in a small bowl. Butterfly the chicken to make two smaller breasts. Place chicken in bowl and let sit in refrigerator for 1-4 hours. Let chicken come to room temperature before grilling. Grill until done. Slice onion rolls and arrange chicken, cheese, guacamole, bacon, and other topping on each sandwich. Enjoy!

BBQ Chicken Sandwich

These meal is probably one of the easiest to prepare. Served up with either premade or homemade sides, you can't go wrong with this dish!

Ingredients:
2 buns
1 chicken breast
1/2 cup BBQ sauce

Marinade your chicken in 1/2 of the BBQ sauce for 1-4 hours. Let the chicken come to room temperature before grilling. Grill until done. Shred the chicken in a small bowl. Place chicken on buns and top with additional sauce.
