Taco Ring

Back in college I used to cook a lot for my friends. We'd watch Grey's Anatomy and have Thursday night dinners. Those dwindled off once I got into nursing school, but some of my favorite memories with my college friends were from those times. Here is a recipe from my college cooking buddy and dear friend, Jacqueline. She gave me my pizza stone and taught me how to make this delicious dinner.


Ingredients:
2 cans of crescent rolls
1 lb ground beef
1 pkg. taco seasoning
1 (7 oz) pkg. of cheddar cheese
Various taco toppings including but not limited to: salsa, sour cream, lettuce, tomatoes, extra cheese, black olives, and onions

Directions:
Brown the ground beef in a skillet over medium heat. Drain off excess fat. Add taco seasoning packet and mix well. Add cheddar cheese and let cook until melted. Meanwhile, get out your pizza stone (if you don't have one, you can use a cookie sheet). Place the crescent rolls with the shortest side towards the middle of the pizza stone. You will lay them out with the edges of each crescent rolls overlapping until you have what looks like a sun with the points hanging off the edge of the pizza stone. See picture.


Spoon meat mixture on the crescent rolls. Then, doing two at a time, take the edges that are hanging off the edge of the pizza stone, cross them over the meat mixture and press against the inner ring of the circle. Finish with remaining crescent rolls. Bake at 350 degrees for 10 minutes. Slice and finish off with the taco toppings.
