Shrimp n' Grits

If you haven't ever tried shrimp n' grits you need to change that. Real fast. By trying this recipe. Creamy gouda grits are topped with shrimp, bacon, and green onions. Drooling yet? You should be. I adapted this recipe from A Spicy Perspective. They are delicious!


Ingredients:
1 cup of instant grits
4 cups of chicken broth
3 Tbs butter
2 cups (or more if you're me!) Gouda cheese, shredded
Dash of Cayenne pepper
Dash of Garlic powder
Dash of Onion powder

1 lb shrimp
1/2 lb bacon, chopped
1/2 cup green onions, sliced
1 large clove garlic, minced
2 Tbs parsley, finely chopped
1/2 lemon, juiced
Salt and pepper

For the grits:
Bring chicken broth to a boil in a medium saucepan. Add grits. Turn down to low heat. Stir so that clumps do not form. Cook 10-12 minutes or until all the liquid has been absorbed. Add butter and cheese. Stir until cheese and butter are melted. Add cayenne pepper, garlic powder, and onion powder to taste.

For the shrimp:
Cook the bacon in a skillet on medium/high heat. When bacon is crisp, scoop out of pan onto a paper towel. Pour the bacon grease into a bowl. Using about 1 Tbs of the bacon grease, saute the shrimp on medium heat in the same pan until pink. Add onion, garlic, parsley, and lemon juice along with another Tbs or two of the bacon grease. Let cook for 2-3 minutes. Season with salt and pepper as needed. Serve shrimp on top of the grits.
