Chicken Cordon Bleu Pasta

Yum-o! Chicken Cordon Bleu turned into a pasta dish? YES. This dish can be made healthier by using whole wheat pasta and fat free milk and cream cheese. I also used reduced fat swiss cheese. And you can even tell! I adapted this recipe from Amy's New Kitchen. I added the onion, garlic, and paprika because her review said that the recipe lacked flavor. Hope you enjoy!


Ingredients:
1/2 lb penne pasta
2 chicken breasts, cooked and chopped
1 cup of ham, chopped (I bought thicker sliced Boar's head Maple Glazed ham)
1/4 yellow onion, chopped
1 clove garlic, minced
1 pkg cream cheese (I used fat free)
1 1/2 cup milk
1 cup swiss cheese, shredded
1/2 cup parmesan cheese
Pinch of paprika
Salt and pepper to taste
1/2 cup bread crumbs
2 Tbs butter, melted

Cook the pasta. Drain and mix with chopped chicken and ham. In a medium sized saucepan on medium heat, put a Tbs of olive oil with onions and garlic. Cook until soft. Add milk and cream cheese. Stir until smooth. Add cheeses and spices. Stir until combined and cheese is melted. Add pasta, chicken, and ham. Stir to combine. Pour into a 8X8 glass casserole dish. Sprinkle with breadcrumbs and pour melted butter over the top. Bake at 350 degrees for ten minutes.

  2. I love chicken cordon bleu and I love pasta, so of course why not mix the 2 together! This sounds delicious. I definitely want to try this soon. By the way, if you have a good potato soup recipe, can you post that? I have tried 2 already and neither one turned out good. The one I made last night might have been ok had I not mushed the potatoes up so much. It ended up being a milky-potato liquid mess...no good.
