Cajun Gertrude

This recipe is an adaptation of something one of my co-workers makes. She uses regular sausage, but I thought it might taste delicious if I added smoked sausage and a little creole seasoning. Basically I made a pretty simple jambalaya. Ben loves jambalaya and I am always looking for recipes to try.

Ingredients:
2 packets Lipton noodle soup
1 package turkey smoked sausage, sliced
1 bell pepper, chopped finely
1 onion, chopped finely
1 cup celery, chopped finely
1 clove garlic, minced
1 1/2 cups rice
Creole seasoning

Boil 7 cups of water. Add noodle soup packets. Cook according to package instructions. Meanwhile, place sausage on a frying pan on medium heat. When browned, flip sausage over. Remove from heat when both sides are browned. Place vegetables in the frying pan that the sausage was in. Cook until soft. In the pot with the soup, mix in the sausage, vegetables and rice. Sprinkle with creole seasoning. Mix well. Pour into a large baking dish. Preheat oven to 350 degrees. Cook, covered in foil, for 1 1/2- 2 hours until liquid is absorbed and rice is cooked. For the last 1/2 hour, cook uncovered.
